Recipe for Portuguese Polvo a Lagareiro (octopus)

For the octopus, you are going to need: 1 kg of octopus; 4 garlic cloves crushed; 4 bay leaves; ¾ cup of olive oil (5 oz); Salt and pepper to taste;

Paprika to taste.

For the potatos: 6 medium sized potatos; ¾ cup of olive oil; 4 garlic cloves crushed; 2 tablespoons of butter; Parsley to taste; Salt and pepper to taste.

Directions: 1. In a pressure cooker, add the bay leaves, the garlic and olive oil, let them brown. 2. Add the octopus and the salt and pepper to taste, cook it under pressure for 15 minutes. 3. Turn off the stove and let the cooker cool down so you can open it, and then, without the cover, let the broth reduce. 4. Reserve. 5. Grease the potatos with the butter and add salt. Cook it on the oven for about 45 minutes, until they look golden brown. 6. In a big pan, heat the olive oil and add the garlic, the octopus and the potatos. 7. Once again, let them brown a little, turn off the stove and season with salt, pepper, paprika and parsley.
